Nifty Thanksgiving Tips

Family around the tableWhether you’re having Thanksgiving with family or friends, cooking the meal can be a real chore! Even with nine sets of hands like Anna’s family has, cooking, baking and cleanup can take hours upon hours the day of. For a quicker, easier, more relaxed Thanksgiving day with little to no hassle try some of these tips this year.

Tip 1: Baked Potatoes!

To make things easier the day-of, bake your potatoes in foil the night before and warm them up in the oven or just turn them straightaway into Mashed Potatoes. The foil keeps the skins from drying out and you can avoid using precious oven space by just keep them warm with the rest of the food!

Tip 2: Pies done?

Pie crusts can be frozen! Put the pie crust in your tin(Or buy pre-made pie tins!) and then freeze it until you’re ready to bake. Make the filling for your pies a few days early, then store them in your refrigerator and throw the pie together day of for a fresh tasting and little-hassle pie!

Tip 3: Get the Turkey going!The Perfect Turkey

If you’re having a hard time getting your turkey flavorful and moist all at the same time, start marinating your turkey the night before you cook it and pour a beer of your favorite brand in the roaster to keep it moist!

Tip 4: Cleaning!

Keep the kitchen as clean as you can throughout the entire day, washing as you go to make as little mess to clean up at the end as possible. And to avoid cleaning a thousand plates, stop at the store to pick up some Chinet plates. You can look like glass and classy while still being disposable!

Tip 5: The Cranberry Sauce!Cranberry Sauce

Cranberry sauce has to chill anyway, so why not make it a few days in advance if you’re having homemade sauce? No mess day of and easily stored in the fridge!

Tip 6: A Perfect Gravy!

Getting a lump-free gravy can seem almost impossible during the holidays! However, if you’re cautious about how much liquid you add at a time to your recipe and keep a constant quick stirring hand on it(A fork or whisk works best here), stirring until all the liquid is absorbed into the flour(Or cornstarch) and butter mixture, you should find yourself with a pleasantly smooth gravy.

Tip 7: THANKSgiving!

Really take some time to stop whatever you’re doing, before the meal or after or any time during the day, and remember everything you have to be thankful for. While this may seem like a silly, or almost obvious tip, it’s every bit as important if not more so than the rest of the tips in this blog. Giving thanks helps us to take the focus off ourselves, to remember the blessings in our lives and to think on the reason that we’re having everyone come to our place for a big happy meal.

Great Places to Stay in Ireland

I must say, I never felt so welcome as I did when I arrived in Ireland.


Here are some of the places I stayed as I made my way around the Emerald Isle

Our first three nights we stayed at the City North Hotel. Being accustomed to American hotel rooms, we were delighted to find a queen size bed and a twin bed for our stay. On the table were 3 bottles of water and a fruit basket which was replenished each day. Catherine, the sales director, went out of her way to make me feel at home. Breakfast served in the restaurant offered traditional Irish foods as well as cereals, juices, coffee and tea. What I liked best? The smile of each staff member as they helped me and my family get acclimated during our first few days in Ireland

Probably the most interesting place we stayed during our visit to Ireland, Killiane Castle is located on a farm just outside Wexford. Breakfast at the castle was quite a treat. Freshly squeezed juices assorted bowls of stewed fruits and fruit salad as well as homemade granola and muesli needed us our first morning there as if that were not enough our host Paul brought out menus for a hot breakfast my favorite was the baked eggs but I don’t think you could go wrong with any of the choices. I learned that Kathleen cook everything herself who gets to stay at an Irish Castle we were also told of a Friendly Ghost that haunts the castle but we never saw it. Walking around the ground was like taking a step back in time. Check out the pictures at

Wellington Park Hotel

After a long day of travel and a late arrival, we were greeted by friendly front desk staff. To my relief, they arranged our bus tour for the next day. Due to our brief stay, we couldn’t avail ourselves of the attractions within walking distance which included Ulster Museum, Queen’s University, and the Botanic Gardens. We’ll have to return and check them out during our next visit. The Wellington Park Hotel is a warm and inviting place for your stay in Belfast

Aishling House
 Our friendly host, Bob, will make you glad you chose to stay with them. Away from the beaten path and nestled in a residential area Aishling House offered a quiet respite from busy days of sightseeing and walking around Dublin. Being close to public transportation made it easy to get in and out of Dublin City Centre. Breakfast was a combination of cold entrees available on the buffet, and hot dishes prepared by the Bob and Fran. Victorian style decorations invited us to a step away to a simpler era, adding to the feeling of quiet and peace here .
Our trip to Ireland put us on the receiving end of hospitality. Here are some lessons learned:
  1. Make every guest feel particularly welcome. From bottles of water to arranging taxis, we appreciated every gesture that said, “We’re glad you chose to stay with us.”
  2.  Clean fresh accommodations help weary travelers feel comfortable and refreshed. Thirsty towels and crisp sheets invited us to feel at home.
  3. Little details make a difference. Offering to get buses and taxis took a load off my mind when we arrived in each City. What a relief for me as a traveler.

Three Tips to stay safe While You Visit the Mexican Border

Holiday travel can be exciting and fun. The Mexican border is a popular vacation site during any holiday. Use these three tips to stay safe while you spend your holidays here.    Border

#1. Exercise caution:

  • Stay aware of your surroundings. Put your smartphone away. Being distracted on your cellphone makes you an easy target for a watchful thief.
  • Dress nice, but not too nice. Don’t wear expensive looking jewelry. Criminals are looking for targets who appear to have more money to steal. Expensive  jewelry operates like a sign that says to a criminal, “Pick me! Pick me!”
  • Keep your camera in a bag or purse. Looking like a tourist makes you an easy mark for a would be thief.

#2 Ensure you have all your documents when you travel.

  • Documents. Make copies of your travel docs and give the copies to someone for safe keeping. While we all expect to return from our trips, not every trip goes as expected. If you lose your documents or become ill, a quick phone call to a trusted friend or relative can save untold misery if an emergency arises.
  • Money. Exchange money at your bank or a reputable exchange service. Shop around for good exchange services, if you plan to use cash. Even better, use a dummy wallet with a little bit of change that you can throw to a mugger. If you never have to use it, great. If you do, it may save your life!
  • At Customs: Have the docs ready when you cross back into the US. Without documents, you WILL be delayed returning to the US until someone in the US can prove your citizenship. Sitting in a customs waiting area can put a big damper on your holiday plans!

#3 Deny predators anonymity!

  • Travel in a group. Numbers provide safety when you are in an unfamiliar country. Predators look for people who are by themselves. It gives them anonymity. Staying with a group makes you a less attractive target.
  • Stay in well traveled, well-lit locations. Again, this denies a criminal a place to lurk.
  • Get home before dark. Enough said there!

10 Things to Know About Short Term Rentals

Why is it so hard to find a short term rental?

Let ‘s face it. Most people rent investment property want sure money. If you are only staying 2 or 3 months, that means a landlord has to find someone else to fishort term lease rentalll the property. Keeping this in mind when you are looking for something short term will help you in your search.



Why do short term rentals cost more?

Rental property is a business, just like Microsoft or Nike. If there is no profit, there is not rental property. Short term leases usually mean higher vacancy, which leads to additional fees so the property can continue to short term leaseoperate. This additional fee is worth the convenience of being able to leave after 2 or 3 months without obligation.




If my company is signing the lease, why do I have to undergo a back ground check?

Understand that background checks are standard in most rentals. If your company hires a corporate housing company like Capri to set up your rental for you, the credit check can often be waived, Background checks are to ensure the safety of the coshort term lease backgroundmmunity that you will be living in. Find out if you need to fill out any paperwork to expedite your move in date.



Why can the rent quote from a corporate housing provider only be good for a short time?

When you receive a quote from a corporate housing provider, they may only be able to promise the price for 72 hours or less. Many property management companies have adopted a pricing model that varies the rent to compensate for seasons of high vacancy.  An apartment could cost $1500/month for a 3 month lease one week, then soar to $2600 next month for the same lease term. To lock in a price, often it is necessary to make a decision quickly.


How much advance notice do I have to give when I leave?

In most metropolitan areas, apartment communities require a 60 day written notice to vacate. Your corporate housing provider will very likely have the same provision in your lease with them. Whatever that period is, know that you are responsible to pay the rent through the notice period. Put the date on your calendar so you can plan ahead, and avoid any unpleasant surprises.

Getting Ready to Travel Tips

Every travel must be worthwhile! It could be a travel intended for work or pleasure but either way, it should be an experience worth remembering.  For some, the challenge in travelling is not the “actual travel” itself but the time prior to it or what we travelcan call as the “getting ready” stage. In order to get tthrough this stage easily, we must know about the things we need to do or prepare before we hop on that plane or in that car.


– Make sure to bring and keep Passport, tickets, ID’s and ATM cards securely.

– Inform your family or friends about your destination and even your itinerary.

– Make sure you have access to important nos. like banktravel (1) numbers, insurance co. numbers, etc.


–  Try to be very simple yet organized as possible. You can do this by first categorizing your things. Determine the best place/bag to store your valuables.

– You can make use of plastics like zip clock in segregating your stuff.


– You can use a backpack or any bag that would fit your things but be sure that it is sturdy and secured enough.

4. Carry On

This is most especially important for long travels. If you have stop-overs, see to it that you have ample number of clean clothes. One thing that should also always be in your carry-on is your medication.


Some clothes are better rolled than folded. It clears more space in your luggage and even makes it lighter!


It is a “must” to know what kind of weather your destination has so you can pack the appropriate clothing and other stuff which might be needed.


Another “must do” especially for long trips is to pre-determine the weight of your luggage ( which would vary per carrier). No one wants to bring a luggage that’s heavier than yourself but you just couldn’t help it right? so know your luggage limit if your not willing to pay extra charge.


A checklist is always a helpful tool and it does apply when you are packing the things you need for travelling! You can also keep a different list for the things you still need to buy. Once you see that everything on your list has been checked, it will surely give a sense of fulfillment!


A travel itinerary is not at all times necessary but could be “something nice to have”. If you are going on a business trip, an itinerary is most likely prepare for you but if you are out on a vacation, you should be able to do some research and list on your own.


Spreading the word does not literally meaning telling your random neighbors about your trip.  The last tip simply because it is the most important of all the tips. You must inform your family, relatives, friends or officemates about your trip and itinerary. Although you want to feel independent, it is still important to be safe when you’re travelling to a different place. You should also take note of the numbers of the local tourism office. If you have any relatives or friends on that place then paying them a visit or meeting up could be a good thing.

A Letter, A Picture, and A Company

“Who is this, Ma?” Luigi asked.
“Oh, that’s Gianni,” his mother replied in broken English. “The daughter of my friend”
“What friend?”
Dad’s mother, Anna, came to America from a small village near Sorrento, Italy. Anna grew up with Maria, my mother’s mom. Anna’s older sister, Luisa, had passed away, leaving 3 children behind. At her own mother’s urging, Anna married her sister’s husband and moved to  Brooklyn, New York,  to raise his children. She and my grandfather, Salvatore, had another eight children, of which my father was her third child. Anna missed her home and stayed in touch with her friend, Maria, through letters.
My mom, the oldest of Maria’s five children, and the only girl, quit school in the 4th grade to help her mother at home. Her brothers often spied on her when she grew older, and once, her father dragged home when her brothers told him about a secret meeting with a boyfriend. Mom longed for freedom, and ached to come to America. One day in May of 1959, her mother, Maria,  sent a picture of my then 22 year old mother to Anna. This picture turned my dad’s head. And soon, Giovanna, my mother received a letter from this dashing young man in America

On September 1st, 1959, they met for the first time. Dad proposed. Mom accepted. 10 days   later, on September 10th, they were married in a little chapel near the little village where my grandmothers and my mother grew up.

The next 38 years flew by.  I remember setting the table every holiday with the best china in preparation for the  friends who were always welcome in our home. Mom and Dad loved to entertain guests! I guess that is where I got the bug to offer hospitality. Even if guests dropped in, Mom always found food and coffee to offer them to make them feel at home. My parents never knew a stranger, and neither do we!

I chose the name Capri to honor my Italian heritage. It is part of the culture of our company. For instance, the fixin’s for a spaghetti dinner sit in a gift bag on the counter of your furnished apartment.
